  • Kosher salt, to taste
  • Shells and Filling:
  • 20 lumaconi shells
  • 1 large egg, beaten
  • 15 oz whole milk ricotta
  • 2 ¾ cups mozzarella cheese, freshly grated (divided)
  • ½ cup Parmesan cheese, freshly grated
  • 2 tbsp Italian parsley, finely chopped
  • ¾ tsp kosher salt
  • ¼ tsp black pepper
  • 5 cloves garlic, grated
Instructions
  1. Prep the Pasta Shells:
    1. Bring a large pot of salted water to a boil.
    2. Add the lumaconi shells and cook until al dente (about 8–10 minutes).
    3. Reserve 1 ¼ cups of pasta water, drain, and rinse shells under cold water to stop cooking.
  2. Make the Vodka Sauce:
    1. Heat olive oil in a large skillet over medium heat.
    2. Add shallots and cook for 5 minutes, until soft.
    3. Stir in minced garlic and cook for an additional minute.
    4. Add butter, tomato paste, and red pepper flakes; cook for 5 minutes until the paste turns deep red.
    5. Pour in vodka and cook until the liquid evaporates (about 2–3 minutes).
    6. Reduce heat to low, stir in cream, and add ½ cup of reserved pasta water.
    7. Gradually add Parmesan cheese in 1-cup increments, stirring until smooth.
    8. Add more pasta water if needed for a creamy consistency. Season with salt to taste.
  3. Prepare the Filling:
    1. In a mixing bowl, combine beaten egg, ricotta, 2 cups mozzarella, Parmesan, parsley, salt, black pepper, and grated garlic.
    2. Transfer the mixture to a resealable bag; cut a small corner to pipe the filling.
  4. Assemble and Bake:
