For the Pasta:
- 200 g 7 oz spaghetti or fettuccine
- 2 tablespoons extra virgin olive oil
- Salt and freshly ground black pepper to taste
- ¼ cup reserved pasta water
For the Sauce:
- 1 cup ricotta cheese
- Zest of 1 lemon
- Juice of 1 lemon
- ¼ cup grated Parmesan cheese
For the Grilled Chicken:
- 2 boneless skinless chicken breasts
- 2 tablespoons olive oil
- Juice of ½ lemon
- 1 teaspoon dried oregano
- Salt and pepper to taste

Step 1: Marinate the Chicken
In a bowl, whisk together 2 tablespoons olive oil, juice of ½ lemon, dried oregano, salt, and pepper.
Add the chicken breasts and coat evenly. Let marinate for 15 minutes while you prepare other ingredients.
Step 2: Cook the Pasta
Bring a large pot of salted water to a boil.
Add the pasta and cook according to package instructions until al dente.
Before draining, reserve ¼ cup of pasta water. Drain and set aside.
